Simple, humble, and full of soul — “Fave alla Poverella” is a traditional dish from Puglia region that turns basic ingredients into pure comfort.

This rustic recipe, rooted in Italy’s "cucina povera", features tender fava beans gently boiled and dressed with extra virgin olive oil, garlic, and a hint of spice. It’s a celebration of simplicity — the kind of food nonna would make with whatever was growing in the garden. Perfect as a side dish or a light meal with crusty bread, this is Italian home cooking at its most honest.
Whether you use fresh or frozen fava beans, the outcome is equally delicious!
Ingredients
1 pound fava beans (shelled, fresh or frozen)
Salt, to taste
8 fresh mint leaves, torn
a pinch of red pepper flakes
1 garlic clove, minced
Juice of 1 lemon
4 tablespoons extra virgin olive oil
1/3 cup breadcrumbs
1/3 cup grated Pecorino cheese
Method
Cook the Fava BeansBring a pot of salted water to a boil. Add the fava beans and cook for about 10 minutes, until tender. Drain well and set aside to cool completely.
Prepare the DressingIn a large bowl, tear the mint leaves and add the lemon juice and olive oil. Stir to combine.
Add AromaticsChop the chili pepper and mince the garlic. Add both to the bowl with the dressing.
Combine EverythingAdd the cooled fava beans to the bowl. Then add the breadcrumbs and grated Pecorino. Mix everything well until evenly combined.
Chill and ServeRefrigerate the salad for at least 2 hours before serving to let the flavors meld.
