fall caprese salad

A cozy twist on the classic Caprese— sweet roasted delicata squash meets creamy mozzarella.

Delicata squash is a variety of winter squash recognized for its thin, edible skin. When roasted or prepared by other methods, the skin becomes especially tender and sweet.


Ingredients


• 1 delicata squash

• Fresh mozzarella ball

• Olive oil

• Salt & pepper

• Fresh oregano


Method


1. Slice the delicata squash into rings, remove seeds, and season with a drizzle of olive oil, salt and pepper. Now roast at 400°F for about 20 minutes until golden and tender.

2. Layer the roasted squash with slices of mozzarella.

3. Drizzle with olive oil, sprinkle with salt, pepper, and fresh oregano.

4. Serve warm or at room temperature.
