These Strawberry Ricotta Cream Cups are the perfect treat. Light, creamy, and naturally sweet, they come together in minutes with just a handful of ingredients. The combination of fresh strawberries and smooth ricotta makes for a refreshing, not-too-sweet dessert, while a crumble of amaretti cookies adds just the right touch of crunch.

Served in individual glasses and topped with a whole strawberry, they’re as beautiful as they are delicious—an effortless way to show love and appreciation on a special day.

Ingredients


  • 2 cups of good quality ricotta

  • 2 cups fresh strawberries

  • ½ cup granulated sugar

  • 8 amaretti cookies (or other crunchy cookies like biscotti or shortbread)


Method


  1. Prepare the Strawberries: Slice 4 strawberries thinly and set them aside. These will be used to layer the dessert.Set aside another 4 whole strawberries for decoration.

  2. Make the Ricotta Cream: Chop the remaining strawberries and place them in a large mixing bowl.Add the ricotta and the sugar.Blend everything using a food processor or immersion blender until smooth. You can blend it until completely creamy or leave it a little chunky if you prefer texture.

  3. Assemble the Cups: Spoon a layer of the strawberry ricotta cream into individual serving glasses.Add a few slices of strawberry on top.Add another layer of ricotta cream on top of the sliced strawberries. Smooth the surface with the back of a spoon or spatula. Place in the fridge for at least 1 hour.

  4. Add Crunch: Just before serving, top with some strawberry slices and crumble 1–2 amaretti cookies (or other cookies) on top of each cup for a delicious crunchy contrast.
