Raw Tomato Pasta sauce

Have you ever made pasta with raw tomatoes? Yes, raw!

It is delicious, especially in summer time when tomatoes are in season. It is a wonderful idea especially on hot days when the idea of a hot dish is not very appealing.

It is very easy and quick, you just need to prepare the tomatoes at least 30 minutes in advance to let the flavors come together.

The recipe below is ideal for 4 servings of pasta. Bear in mind that you can make the same quantity even if you are making a single portion. You can store the leftover sauce in the fridge and use it in the next couple of days. It will actually get even more flavorful!


SERVES 4


Ingredients

  • 1 pound of ripe vine tomatoes

  • 1/4 cup olive oil

  • 10 basil leaves

  • 2 cloves garlic (halved)

  • your favorite pasta

  • Salt and pepper

Method

  1. Dice the tomatoes - the size does not matter - and place them in a colander. Let them drain in a colander for 5 minutes.

  2. Place them in a large bowl, add the oil, basil and garlic, and season with salt and pepper. Toss gently, cover, and set aside in a cool place.

  3. After 30 minutes, blend everything together*. You can use a hand blender or a food processor, the important thing is that you blend intermittently just for a few seconds: the result should be a chunky, rustic sauce.

  4. Cook your pasta according to package instructions and toss it with the sauce.

  5. Add cheese if you’d like and enjoy.

* You can discard the garlic before blending the sauce if you do not like the strong taste of raw garlic. You can also add a teaspoon of capers or/and a handful of black olives to add even more flavor!
