Who knew just a few little ingredients could be so delicious!
You will just need linguine pasta, 2 zucchini, a lemon, a garlic clove, a can of tuna and some parsley.
This pasta dish is ready in 15 minutes and it is perfect for a quick lunch.
SERVES: 2
Ingredients
6 ounces of Linguine or Spaghetti
2 small zucchini or 1 big one
1 clove of garlic (peeled and halved)
1 can of tuna
1 lemon
⅓ cup of chopped parsley
2 Tbsp of extra virgin olive oil
Salt and pepper
Method
Cut the zucchini in thin rounds and set them aside.
Zest and juice the lemon and set aside.
Cook the pasta in a big pan with salty water.
While the pasta is cooking, brown the garlic in a pan with a little oil.
Now add the zucchini, then the lemon juice, and zest. Season with salt and pepper. Be careful with the quantity of salt you use because the tuna is already quite salty.
Cover with a lid and cook for about 10 minutes, checking from time to time to ensure that nothing is getting stuck to the pan. If that happens, add a couple of tablespoons of the water where the pasta is cooking and mix well.
When the pasta is almost cooked, remove the garlic from the pan and add the tuna.
Add the freshly drained pasta and sprinkle some chopped parsley.
